Happy first week of August! I hope you’ve had a chance to get away to a beach or maybe a pool or lake somewhere for a few days while the summer sun is hot. I recently returned home from a delightful week at the beach with my family. It’s been great to soak up the sun and be inspired by the great food we ate while we were away.
While on vacation, we ate quite a bit of seafood, and I was inspired to make this crab salad recipe I’m sharing with you. It includes the best summer produce that is so plentiful right now—corn and tomatoes. Find the juiciest plump tomatoes at your farmers market or store, pick up some corn, avocados, and crab meat, and make this salad. No cooking is required, except for a quick steam or grill of the corn. Mix everything together for a super easy yet delicious lunch or dinner.
Another fruit that is so plentiful in the summer is blackberries. I’ve featured them in a few recipes this summer so far, but not in a cobbler. This is also quick to make, and the blackberries are so juicy and delicious with the shortcake topping. Serve with vanilla ice cream for a crowd-pleasing dessert.
