Blackberry Cobbler

Ingredients: 

For Blackberry Filling:
  • 6 cups fresh blackberries
  • 1/2 cup (100 g) granulated sugar
  • 1/2 lemon, zested, juiced
  • 2 Tbsp. cornstarch
  • 1 tsp. vanilla extract
  • Pinch of kosher salt

For the cobbler:

  • 1 cup (120 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 4 Tbsp. unsalted butter, cubed
  • 1/4 cup whole milk
  • 2 large eggs
  • sugar, for sprinkling
  • Vanilla ice cream, for serving

A few notes on making this: 

  • Blackberries are so juicy and plentiful during the summer months—this is a perfect dessert to enjoy them at their best. 
  • This can be made in any oven-proof dish, but use a cast-iron skillet if you have one. 
  • Don’t forget the vanilla ice cream to serve with it! 

Directions: 

  • Arrange a rack in center of oven and preheat to 350ºF.
  • Make filling:
    In a large bowl, toss blackberries, granulated sugar, lemon zest, lemon juice, cornstarch, vanilla, and salt. 
  • Let rest for 30 minutes.
  • Make cobbler while filling sits:
  • In another large bowl, whisk flour, granulated sugar, baking powder, and salt. 
  • Work butter in with your fingertips or a pastry cutter until combined.
  • Stir in milk and 1 egg until just combined—don’t overmix. 
  • Transfer blackberry filling to a 10" ovenproof skillet or dish, and top with dollops of dough.
  • In a small bowl, beat 1 egg with a splash of water. 
  • Brush dough with egg wash and sprinkle with sugar.
  • Bake cobbler until biscuit topping is deeply golden and blackberry mixture bubbly, about 45 minutes.
  • Let cool 10 minutes.
  • Serve with vanilla ice cream.
